Days have started to become warmer. Feels like it will be spring here too. Soon . Lately I have been having tough luck at the cooking front. Dishes over dishes coming out mere eatable, spilling being on an all time rise. I feel I have spilled the most in this week than in the past year. Things haven’t been right. For you my dear friends, I had searched and collected hoard of recipes which I was looking forward to share but none came close to even suggesting you. 

I have gained little more wisdom, as I would like to pretend. One thing I know for sure is that nothing can be perfect in all means. Being a huge supporter of raw, wholesome goods, whole foods in an important part of my being. I totally love them. To me nothing can even come close to them but lately they broke my heart. It was hard for me, you know but I survived. I survived eating the food I prepared from their site. I had big hopes. I was taken by shock when I found the recipes came nothing close to what I had imagined them to be in my head. They were tasteless. Lo mein was nothing the kind I eat at the next door chinese place. Cabbage leek fritters were just plain salty. I am still contemplating if it was just mere bad luck at cooking front or them. I feel good in blaming them. At least makes me feel I am doing ok. For now.

So I decided to go back to my old faithful recipes for a while. I think it was in our best interest. That gave me a reason to be back to my beloved home and say hello to you my dear friends. So today, I thought since it is spring already, we should welcome it with a smoothie.

Watermelons. Who doesn’t love them? I can’t think of anyone but if you are one of them then I suggest you to try this. It is not completely water- melony. Slight hint of coconut water makes it a refreshing summer drink. Great for loosing weight or just to survive through the morning rush. watermelon 2

Watermelon smoothie

  • 2 cups, watermelon chopped
  • 1/2 cup coconut water
  • 1/4 cup water
  • Salt to taste
  • Mint to garnish (optional)
  • Few lemon wedges to garnish (optional)

In a blender, add watermelon chunks, coconut water and water. Blend until smooth. Add salt and taste. Serve garnished with mint and lemon.
