Happy mother’s day to all the wonderful awesome mothers in our lives !! If you are still looking for a good recipe to serve your mom, try this one. Mother’s always make sure we eat healthy and who better than them will appreciate a healthy whole wheat pancake version.
Whole wheat buttermilk pancakes
- 3/4 cup whole wheat flour
- 2 tbsp all purpose flour
- 1 tsp cinnamon powder
- Pinch of salt
- 1.5 tsp baking soda
- 2 tsp brown sugar
- 1 large organic egg
- 1/4 tsp pure vanilla extract
- 1+1/4 cup buttermilk, low fat (You can substitute milk as well) (You might need few tbsps more to get the desired consistency, so add 1 tbsp at a time)
- Coconut oil for cooking or any other oil
In a bowl, mix flour, cinnamon, salt, baking soda and brown sugar. Add egg, vanilla extract and buttermilk. Mix to get a smooth mix.
Heat a skillet on med-high heat. Add 1/4 tsp coconut oil and move it around with spatula so the surface is coated. Drop 3-4 tbsp of pancake batter or as desired in the skillet. When bubbles start forming on the surface, flip and let the other side cook for a minute or two. You might need to lower the gas if you feeling they are getting burnt.
Serve them hot with maple syrup and chopped strawberries. You can make them ahead of time and keep them in a preheated oven at 200F.
